Gluten Free Lemon Cod with Herb Sauce

Serves 4

Ingredients

  • 4 thick cod fillets
  • olive oil, for brushing
  • 8 thin lemon slices
  • salt and pepper

For the herb sauce

  • 4 tbsp olive oil
  • 1 garlic clove, crushed
  • 4 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh mint
  • juice of 1/2 lemon
  • salt and pepper

1. Preheat the oven to 200°C/400°F/Gas Mark 6. Rinse each cod fillet and pat dry with kitchen paper, then brush with oil. Place each fillet on a piece of baking paper that is large enough to encase the fish in a parcel. Top each fillet with 2 lemon slices and season to taste with salt and pepper. Fold over the baking paper to encase the fish and bake in the preheated oven for 20 minutes, or until just cooked and opaque.

2. Meanwhile, to make the herb sauce, put all the ingredients into a food processor and process until finely chopped. Season to taste with salt and pepper.

3. Carefully unfold each parcel and place on serving plates. Pour a spoonful of herb sauce over each piece of fish before serving.
